This limited-edition release from Waubs Harbour marks a groundbreaking first in Australian whisky, crafted using fresh yeast cultivated in the distillery’s own lab. The bespoke yeast imparts a distinctive chocolate–orange character into the new-make spirit, forming the base of its unique profile. Matured exclusively in ex-Tawny Port French Oak casks, it develops deep maple syrup sweetness and buttery sultana notes. With only 647 bottles produced, this is a rare and innovative Tasmanian single malt.
