Waubs Harbour Kelp Revival is a limited-edition, maritime Tasmanian single malt whisky from Waubs Harbour Distillery in Bicheno, on Tasmania's rugged east coast. Matured in Apera (Australian sherry) casks and finished in a rare 70-year-old Tawny Port cask, with a small amount of coastal peated whisky married in for nutty, earthy complexity, it delivers nectar honey, chocolate-coated sultanas and rich spice. Only 607 bottles were ever produced, released specifically to support the Tasmanian Giant Kelp Restoration Project β€” a genuine conservation effort happening within sight of the distillery itself β€” and sold out entirely within an hour of its online release.

Waubs Harbour Kelp Revival Tasting Notes.

Nose: Nectar honey, dried fruits like chocolate-coated sultanas and apricots, with subtle oak influence.
Palate: Juicy canned fruit from the Apera casks, rich spice and thick sweetness from the Tawny Port, with a nutty, earthy complexity from the coastal peat.
Finish: Lingering sultanas and melted butter from the Tawny cask, with a persistent nuttiness from the peat β€” smooth and full without any alcohol burn, despite the 45.7% strength.

Why Choose Waubs Harbour Kelp Revival?

Waubs Harbour is one of the closest distilleries to the ocean anywhere in the world, set on the rocks of a former oyster hatchery in Bicheno on Tasmania's far east coast, cooled entirely by an ocean-run cooling system β€” genuine maritime provenance rather than a marketing claim. Kelp Revival takes that coastal identity further with real purpose: it was released specifically to raise awareness and support for the Tasmanian Giant Kelp Restoration Project, a partnership between The Nature Conservancy, the Institute for Marine and Antarctic Studies, and CSIRO, working to regenerate the nearly-extinct giant kelp forests along the Tasmanian coast β€” including a trial site just a stone's throw from the distillery itself. The whisky's own maturation is genuinely distinctive too: Apera sherry casks provide the base, finished in an exceptionally rare 70-year-old Tawny Port cask, then married with a small amount of coastal peated whisky for nutty complexity rather than overt smokiness. With only 607 bottles ever produced and the entire online allocation selling out within an hour of release to the distillery's mailing list, this is a genuinely scarce release from a young but rapidly acclaimed distillery β€” Waubs Harbour's flagship "Original" whisky already won Gold at the World Whisky Masters 2023, and the distillery's category win at the World Whiskies Awards 2024 put it in contention for World's Best. A compelling pick for collectors chasing genuinely rare Tasmanian whisky with a real conservation story behind it.

Waubs Harbour

Waubs Harbour Distillery was founded by Tasmanian family Tim and Bec Polmear, in partnership with Tim's brother Rob Polmear, who serves as Head Distiller after previously holding senior roles at Overeem Whisky and Lark Distillery. Set in a converted oyster hatchery perched on the rocks of Bicheno on Tasmania's far east coast, the distillery takes its name from the historic name for the area, honouring Wauba Debar, a Tasmanian Aboriginal woman known as the "heroine of the sea" for her bravery. Since officially launching in April 2023, Waubs Harbour has built a reputation for genuinely maritime-influenced Tasmanian whisky, quickly selling out successive limited releases and donating proceeds from special bottlings β€” including $4,800 from the auction of bottle #01 of its Founder's Reserve β€” to the Great Southern Reef Foundation.
