Lark
Bill Lark founded Lark Distillery in Hobart in 1992, after lobbying that overturned a 153-year ban on small-scale distillation in Tasmania β a move credited with founding Australia's modern craft whisky industry. Lark single malt is distilled from Tasmanian barley and local rainwater, matured primarily in small 100-litre casks for rich, fast-developing flavour. The Classic Cask is the natural starting point; the Muscat Cask, Peated Cask and single barrel releases show its range at full stretch.
