Lark Distillery holds a special place in Australian whisky history: it was Bill Lark's successful lobbying in 1992 that overturned a 153-year ban on small-scale distillation in Tasmania, effectively founding the modern Australian craft whisky industry. What began as a passion project in Hobart's Constitution Dock has grown into one of Australia's most respected and internationally recognised whisky producers. Lark single malt is made from Tasmanian barley and local rainwater, matured primarily in small 100-litre casks that accelerate flavour development,  delivering rich, complex whiskies full of fruit, spice and oak. The Classic Cask is the perfect introduction; the Muscat Cask, Peated Cask and rare single barrel releases take things to extraordinary heights. Whisky Estate is delighted to carry Lark Distillery across its full range, including limited releases and special editions that sell out quickly.
