Nose: Walnuts and pecan pie meet eucalyptus, ginger, and kunzea; blackcurrant jelly, crème de cassis, tea leaves, balsa wood, and old tobacco box; truffle, slow-cooked savoury richness, leather, palo santo, sandalwood, preserved lemon, passionfruit, vanilla slice, floral hints (rose, cherry blossom, violet), licorice, clove, mocha, dark cherries.
Palate: Silky and seamless; a bright burst of green jelly frogs and lime cordial moves into crème brûlée, raspberry jam, coconut; earthy mocha and oak spice with threads of palo santo, clove, and tea leaf; jammy red fruits woven through toasted oak and warming spice.
Finish: Finely structured with gentle oak grip; briny Sullivans Cove signature intertwined with anise and mandarin pith; red jellybeans and truffle settling into dark chocolate richness, lifted by white pepper, clove, and a precise mineral flicker.
