Distilled in November 2013 and decanted in December 2024, this 11-year-old single cask (TD0455) matured in a 300L French oak ex-tawny cask previously filled with an earlier batch of Sullivans Cove single malt. Bottled unflocked and unfiltered at 48.1% ABV, the cask yielded just 496 bottles. This second-fill French oak maturation lets the vibrant Sullivans Cove spirit shine while drawing refined spice, confection and nutty depth from the seasoned oak.

Sullivans Cove TD0455 Tasting Notes
Nose: Earthy musk sticks, dried figs, honeyed carrots and parsnip, rich caramelised sugars and liquorice allsorts, sweet herbs and dill with a lingering maritime brine.
Palate: Silky and full-bodied with toasted marshmallow, crème brûlée and golden syrup dumplings; toasted oat biscuits, treacle and dark chocolate add tannic structure, brightened by cranberries and cherries.
Finish: Long, waxy and lingering with waffles, maple syrup and ice cream, a flourish of ripe banana and a persistent sweet, waxy depth.
